Day #18

Breakfast:
1 tsp olive oil
1/4 cup milk
2 scrambled eggs
3 strips turkey bacon
1 grapfruit

(1 carb block left over)

Lunch:
Shartel Cafe
Jamaican Jerk Chicken Salad
3 oz grilled chicken breast, blackened
Bed of lettuce, candied walnuts, 1/2 cup pineapple, 1 tbs raisins

Dinner:
Eggplant Parmesan
1/2 eggplant
3 oz ground turkey meat
1 cup canned chopped tomato
1 oz grated Parmesan cheese.
1/2 oz Mozzarella cheese
1/4 tsp dried Basil
1/4 tsp dried Oregano

1 pear

Pre-heat oven to 350. Slice and peal eggplant. Place slices in pan. Cook for 5 min on each side. Top with cooked meat, tomato. Add cheeses and sprinkle spices over top. Cook until golden brown or 35 min.

Snack:
1/2 zone bar
1/2 zone bar

  1. Today was good...cooked and made up menu without book recipes. Left one carb block out, but might have made it back in salad from lunch. Drank all the water :)
