Day #1

Breakfast: Fruit Salad
3/4 cup of low-fat cottage cheese
1 cup fresh pineapple, cubed
1/3 low-sugar canned mandarin oranges, drained
3 macadamia nuts crushed
Instructions: place cottage cheese in a bowl, Fold in fruit and nuts.

Lunch: Chef's Salad
1 cup green-leaf lettuce
1/4 cup canned black beans (couldn't get chickpeas for today)
1/2 cup mushrooms
1/2 cup celery chopped
1 tbs olive oil-and vinegar dressing (1 teaspoon olive oil and 2 teaspoons vinegar)
1 1/2 ounces deli-style turkey breast cut up
1 1/2 ounces deli-style ham cut up
1 ounce reduced-cheese cut up
1 medium apple

Instructions: Mix veggies and meat together with dressing, serve apple for dessert.

Dinner: Ginger Chicken
1 tsp olive oil
3 ounces boneless, skinless chicken breast, cut lengthwise into strips
2 cups broccoli florets
1 1/2 cups snow peas
3/4 cup yellow onion, chopped
1 teaspoon fresh ginger grated
Dessert
1/2 orange
Instructions: In nonstick pan, heat oil over med. high heat. Saute chicken, 5 min until lightly brown, add in veggies, ginger and 1/4 cup of water. stir often until chicken is done, veggies are tender and water is reduced to glaze, about 20 min. (add more water if needed).

Snacks:
1 oz cheese
1/2 orange
1 TBS avocado

Blend:
1 cup water
1 pkg Splenda
1 cups frozen berries
3 cashews

EDIT: so dinner didn't happen because we were out and about and it was getting late, so we went to Taco Cabana- where I ate two Fajita Tacos with lettuce, cheese, tomato, and salsa on it. Will plan on dinner tonight. We will see though cause it is Friday and we might go out and to the movies.

  1. so honestly today I did not feel very well. I was cranky and tired. I was pretty bad (food wise) on NYE so that might have something do to with it. Drank all my water which was good, but also had a diet coke (coke zero) and a coffee (with splenda and 1/4 cup of non-fat milk)
