I work today at the hospital so this will be not as fun to make breakfast, the book has an awesome recipe for Day 6-will try later. Pretty much gonna follow Day #2 from A week in the Zone
Breakfast:
Fruit and Yogurt:
1/2 cup fresh blueberries, rinsed and drained
1 tbs slivered almonds
1 cup plain low-fat yogurt
3 turkey bacon strips
Lunch:
Tuna Salad
3 oz. albacore tuna packed in water, drained
1/4 cup celery, chopped
1 tbs olive oil-and-vinegar dressing
2 lettuce leaves
1 tbs. mustard
1 tsp. pickle relish
Mix all above together
1 apple
1/2 cup fresh pineapple
Dinner:
Foiled Flounder with Green Beans
vegetable spray
4 1/2 ounces boneless flounder fillet
2 tbs yellow onion, peeled and chopped
sprinkling of Parmesan cheese
1/4 tsp freshly ground pepper
squirt lemon juice
1 1/2 cups fresh green beans
1 tbs almonds slivered
Instructions: Preheat oven to 425. Tear off an 18 by 12 inch piece of foil. Spay center with vegetable spray and place fish in center. Top with onion and sprinkle with cheese, pepper and lemon juice. Fold foil loosely over fish, leaving ample space for air. Carefully turn up and seal ends and middle so juices wont leak out. Bake in a preheated oven for 18 min. Meanwhile steam green beans. Drain and fold in almonds.
For desert
1 baked pear: cook for 15-20 min at 350 degrees in dish with 1 cup water. Sprinkle with cinnamon and nutmeg
Snack:
1/2 zone bar
1 oz cheddar cheese melted over
1/2 apple
3 cashews

ReplyDeleteToday was a good day. Really liked the lunch (was surprised)and dinner...though Husby reminded me not to make fish two days in a row. I agree. It is getting easier to obey "the blocks" and be satisfied and I am feeling really good.
ReplyDeleteBaked Pears are hard to do...had to cook a lot longer. WOD was good, a bit fatigued but I was also going up in weight for me to push myself.
